at hsus' *all vegan* animal sheltering expo
HSUS brought in Chef Wanda White, who just three years ago helped bring to fruition an all-vegan cafe at the University of North Texas in Denton, to work with the Expo's catering staff. The staff served 5,000 meals - breakfast, lunch and dinner - to the Expo's 2,000 attendees!
“Just take the vegan word out of it and say 'good food.' That's what it is,” White said.
Expo attendees enjoyed Mexican, Italian, Mediterranean, and other ethnic cuisines. HSUS was quite casual about its approach to serving vegan fare. While all the offerings were animal-friendly, none of the food was labeled specifically vegan, which has turned out to be a more inviting approach for the average conference goer.
